Beet and Carrot Salad

This is a wonderful recipe to use up those fresh-from-the-garden beets and carrots. Its an awesome side dish to bring to cookouts and potlucks and holds up well to use as leftovers. Don’t like cilantro? Fresh parsley works well here, too! ¼ cup lime juice 2 tablespoons olive oil 2 tablespoons honey or agave nectar 1 teaspoon cumin ½ teaspoon cinnamon Sea salt to taste 4 cups shredded beets 3 cups shredded carrots ¼ cup fresh cilantro Mix first six ingredients in a large bowl. Add beets, carrots, and cilantro to dressing mixture and combine. Let marinate an hour or more.

Winter Squash Soup

When the weather gets raw, nothing warms the soul like a good soup. This is an amazingly hearty meal. I like it straight up, but Frank likes to add a little greek yogurt to his. Serve with a nice crustly loaf. Mmmmm ... 1 3-4 lb winter squash, any variety.
